SPRING IN A BOWL


Bibimbap-
Healthy and Delicious !

Spring conjures up thoughts of fresh greens and veggies and no other dish I know of says it better than Korean bibimbap. Spinach , bean sprouts, shredded leaf lettuce, cucumbers, and carrots topped with an egg and served over rice is just like spring in a bowl .While the preparation is a bit involved the results are well worth it.

Bobbie Flay of Boy Meets Grill on the Food Network cooks up this dish on one of his shows and you can find the recipe there. This is one of our family favorites.

Traditionally bibimbap was served over rice with a dallop of kochujang ( hot sauce ) but it can also be used with noodles as well.

    Just type in the word "Bibimbap " in their search box and it'll take you there. There was no other way to go directly to the recipe.

    I can't tell you how thankful I've become for Asian food since my diagnosis of gluten and dairy intolerance. Asian foods, especially Vietnamese and Thai have literally saved my sanity.

    I will be trying your bibimbap very soon. Thank you. Beautiful colors too.

  10. M'mm looks delicious. The one I had once was heavy on the beef and not much variety in the veggies. Do I see bracken in the in the bowl?

  11. Thanks, Ki. Koreans love beef but this dish is suppose to be more about veggies. Every restaurant serves it differently but the one I go to on occasion brings out the veggies and meat in small individual bowls and you get to select what you want.

    You're right about the bracken, or "Kosari " as Koreans call it. I love it's very earthy taste .
